Born from the collaboration with the great affineur Andrea Magi, it is a truly particular cheese, with a unique refinement. After production, the pecorino is left to rest in a terracotta jar together with hop flowers.
This special process gives the cheese an intense aroma, a mix of floral and herbaceous notes that make it truly unmistakable.
